Spinach & Goat Cheese Pastries

Bouchon really loves “empanadas”, which are some kind of stuff bread or pastries. Empanadas are really typical in Hispanic countries, but I never saw any in France as much as I can remember. I never really liked them before because the only times I tried them was after going out late at night in Barcelona and buying them in the street from the beer dealers and as you can imagine, those ones are not really tasty…
But well I decided today to try to make some for the 1st time and see how that would go. It was much faster and easier than expected and the great thing is that you can fill them with basically anything you’d like! Here is the recipe of the ones I made today: Spinach Pastries.

Ingredients
- “Empanada” Dough
- 300g of Spinach (10oz)
- 100mL of cream (3.5oz)
- 3 eggs
- 2 onions
- 1 garlic clove
- a handfull of raisin
- 200g (7oz) of fresh Goat cheese
- 25g (1oz) of Parmigiano-Reggiano cheese
- salt, pepper, nutmeg
- 1 tablespoon of olive oil
Instructions
- Preheat the oven to 200ºC (392ºF).
- In a saucepan, heat the olive oil and add the onions and the garlic. Add the spinach and cook them until they reduced size to about 20%. Add the salt, pepper and nutmeg. Add then 2 eggs previously mixed with the cream and stir well. Remove from the fire and add the raisin and the cheese cut in very small pieces. Stir until the cheese is totally melted in the spinach mix.
- On a oven grid, place the dough on greaseproof paper (or rub butter on a grid and pour some flour on it to avoid sticking of the pastries on the grid). Cut the dough in 4 equal pieces and add 1/4 of the spinach mix on each piece of dough. Seal well the pastries with your fingers and paint the top part using a brush with the last yolk.
- Place the pastries in the oven for about 20 min at 200ºC (392ºF).

Congrats with the new blog! This pastry is similar to something i have made a few times. I recommend trying it adding BACON!

Thoes pastries are awesome. We had them again today and I enjoye them even more. Still my favorite recipe in Kookette.
