Broccoli and Blue Cheese Quiche

I like quiches for many reasons: they are a good option for preparing veggie meals, they are really fast to prepare and easy to make, they permit to get rid of leftovers, they can combine your favorite ingredients and most of all they are always successful because they look elaborate and taste good. I always try to keep some dough in the freezer, like this I know I can always fix a quiche in case of emergency! Although my excuse for making a quiche this time, was that I needed to use some of the broccoli that was getting bad in the fridge. I hope Bouchon will like it!!!

Ingredients
- 1 puff pastry
- 250g of broccoli (9oz)
- 125g of blue cheese (4.5oz)
- 4 eggs
- 2 tablespoons of cream
- 3 tablespoons of cottage cheese
- 1 table spoon of basil
- 100g (3.5oz) of grounded gruyere
- salt, pepper
Instructions
- Wash the broccoli and boil them for 10 minutes in water. Rinse them with cold water and drain them well.
- Mix the eggs, the cream and the cottage cheese. Add the crumbled blue cheese and the basil. Season with salt and pepper.
- Spread the broccoli on the pastry and pour the mixture of eggs and cheese over the vegetables.
- Strew the gruyere all over the quiche and place in the pre-heated oven for about 30 min at 200ºC (392ºF).
