Spinach Lasagna

Today’s recipe is “Spinach Lasagna”. This recipe is vegetarian and can be modified and adapted to your taste easily. It’s one of the plates we love to eat with Bouchon, because his father brings us fresh and ecofriendly spinaches from his vegetable garden and we both love pasta and cheese. Also we are trying to eat vegetarian (and healthy and diet…) as much as possible, but it’s not always easy to find tasty veggie recipes. I think this one is a must in the category!!

Spinach Lasagna

Ingredients

  • 12 pre-cooked lasagna sheets
  • 300g of Spinach (10oz)
  • 100mL of Béchamel cream (3.5oz)
  • 1 onion
  • 200g (7oz) of Gruyère cheese
  • salt and pepper
  • 1 tablespoon of olive oil

Instructions

  1. Preheat the oven to 200ºC (392ºF).
  2. Place the lasagna sheets in hot water and let sit for about 10 minutes.
  3. Meanwhile, in a saucepan, heat the olive oil and add the onions. Add the spinach and cook them until they reduced size to about 20%. Add salt and pepper.
  4. On the bottom of an oven plate, spread some Béchamel. Add a layer of lasagna sheets. Cover with the spinaches. Repeat alternating a layer of spinaches with a layer of lasagna and a layer of Béchamel, as many times as possible. For the last layer, just put some Béchamel and cover with Gruyère.
  5. Place the lasagna in the oven for about 40 min at 200ºC (392ºF).

PS: you can also buy pre-cooked spinach lasagna sheets for a nice green-colored lasagna (or mix it with regular lasagna)
