Guacamole

Guacamole is a great appetizer of Aztec origin. It’s very popular here in Spain. It’s usually served as a dipping sauce for nachos, that you can buy in many different flavors. My favorites are the chili and cheese ones, but I especially like to mix different flavors in a bowl. What Bouchon really likes is to melt cheese on the nachos first.
I don’t like to buy Guacamole already prepared so much, because I think it’s too smooth and liquid. I prefer to prepare it myself, like this I can mix it as thoroughly as I want. Also it takes just a few minutes and doesn’t need cooking or anything!!

Ingredients
- 2 ripe avocados
- 2 tomatoes
- 2 onions
- 1 lime
- 1 chili pepper
- olive oil
- salt, pepper
Instructions
- In a bowl, mix the avocado pulp and the chopped tomatoes, onions and pepper.
- Add a tablespoon of olive oil and the lime juice. Season with salt and pepper.
It’s important to add lime or lemon juice to slow the enzyme causing browning.
