Garlic Confit

This a great way to use garlic about to go bad! It’s really easy to make and you can keep it in the fridge for about a month. You can then add your garlic confit to many dishes to give them a great flavor.

Ingredients
- 2 garlic heads (about 15 cloves)
- 60cl of olive oil
- 3 laurel branches
- 1 teaspoon of rosemary
- 1 teaspoon of pepper
- 3 hot red chili peppers
Instructions
- Put the garlic in a saucepan and cover it with the olive oil.
- Add the spices.
- Let heat for about 45 minutes at minimum fire. The oil should never boil!
- When it’s ready, remove the garlic from the fire and let it cool. Transfer it to a glass jar and keep it in the fridge.
PS: You can also peel them if you prefer.
