Garlic Confit

This a great way to use garlic about to go bad! It’s really easy to make and you can keep it in the fridge for about a month. You can then add your garlic confit to many dishes to give them a great flavor.

Garlic Confit

Ingredients

  • 2 garlic heads (about 15 cloves)
  • 60cl of olive oil
  • 3 laurel branches
  • 1 teaspoon of rosemary
  • 1 teaspoon of pepper
  • 3 hot red chili peppers

Instructions

  1. Put the garlic in a saucepan and cover it with the olive oil.
  2. Add the spices.
  3. Let heat for about 45 minutes at minimum fire. The oil should never boil!
  4. When it’s ready, remove the garlic from the fire and let it cool. Transfer it to a glass jar and keep it in the fridge.

PS: You can also peel them if you prefer.
