Gazpacho

Gazpacho is a vegetables (mainly tomatoes) soup, originating from the South of Spain. It’s consumed cold, so it’s a perfect refreshing dish for hot summer days. There are many variations of gazpacho, but the one described here is the most typical (you can replace the tomatoes with avocados or cucumbers for a green version).

Ingredients
- 1kg of tomatoes
- 1 cucumber
- 1 onion
- 2 garlic cloves
- 1 red pepper
- olive oil
- 2 red hot chili peppers
- salt, pepper, thyme, parsley
Instructions
- Peel and remove the seeds of the tomatoes.
- In a bowl, chop all the vegetables in pieces and mix with a hand blender.
- Add the olive oil and spices. Season with salt and pepper.
- Add a leaf of parsley for decoration.
It’s a perfect way to use vegetables about to go bad… If you want to make your gazpacho more or less liquid, you can add small pieces of bread in it. Enjoy your meal!
