Vichyssoise

Since it’s so hot here these days and we have a lot of vegetables from the garden, I made another refreshing soup which is eaten cold: the Vichyssoise. This origins of this soup are not exactly known, but it is French for sure!!

Vichyssoise

Ingredients

  • 500g of potatoes
  • 300g of leeks
  • 1 onion
  • 250mL of milk
  • 100g of cream
  • 1 tablespoon of butter
  • 1L of broth
  • salt, pepper, chive, nutmeg

Instructions

  1. Peel, wash and chop all the vegetables in small pieces.
  2. In a saucepan, brown slightly the leeks and onions with the butter.
  3. Add the broth and the potatoes. Let cook for about 30 minutes at low fire.
  4. Mix with a hand blender. Add the milk and the cream and let cook 5 more minutes without boiling.
  5. Season with salt, pepper and nutmeg.
  6. Serve cold with a bit of chive for decoration.
