Vichyssoise

Since it’s so hot here these days and we have a lot of vegetables from the garden, I made another refreshing soup which is eaten cold: the Vichyssoise. This origins of this soup are not exactly known, but it is French for sure!!
Ingredients
- 500g of potatoes
- 300g of leeks
- 1 onion
- 250mL of milk
- 100g of cream
- 1 tablespoon of butter
- 1L of broth
- salt, pepper, chive, nutmeg
Instructions
- Peel, wash and chop all the vegetables in small pieces.
- In a saucepan, brown slightly the leeks and onions with the butter.
- Add the broth and the potatoes. Let cook for about 30 minutes at low fire.
- Mix with a hand blender. Add the milk and the cream and let cook 5 more minutes without boiling.
- Season with salt, pepper and nutmeg.
- Serve cold with a bit of chive for decoration.
