Zucchini and Tomato Pie

This is one of the few recipes I prepare that doesn’t have cheese in it! It’s a fresh and vegetarian pie, ideal for a light summer meal. It’s not difficult to prepare easier!

Ingredients
- 1 puff pastry
- 1kg of zucchinis
- 4 tomatoes
- 3 tablespoons of breadcrumbs
- 50g of butter
- 2 garlic cloves
- 1 tablespoon of parsley
- salt, pepper
Instructions
- Peal the zucchinis and cut them in 1cm large slices. Spread them on a plate and cover them with salt. Let sit 30 min.
- Meanwhile, put the pastry in the pre-heated oven for about 10 min at 180ºC.
- Rinse toughly the zucchinis and dry them in a tablecloth.
- Heat the butter in a pan and add the zucchinis. Cook for about 10 minutes.
- Peal the tomatoes and remove the seeds. Cut them in slices.
- Place the zucchinis on the pastry and cover with tomato slices.
- Mix the grounded garlic and parsley with the breadcrumbs and spread all over the pie.
- Season with salt and pepper.
