Spinach Risotto

Today’s recipe is again a vegetarian one, with one of my favorite ingredients: spinaches. This recipe is great to vary a bit from plain white rice, and it looks nice too with the green color. It is a prefect side dish.

Ingredients
- 2 cups of white rice
- 1 cup of white wine
- 2 onions
- 2 cups of boiling water
- 200g of spinaches
- 2 tablespoons of grounded parmigiano reggiano
- olive oil
- salt, pepper
Instructions
- Heat the oil and fry the rice in it for a few minutes, but be careful not to burn it.
- Add the chopped onions to the rice and stir toughly for a a few minutes.
- Add the cup of white wine, stir, place a lid of the pan and then let sit at low fire for about 5 minutes.
- Pour the 2 cups of boiling water and let sit for 15 minutes at low fire.
- Add the spinaches on top of the rice and mix it all together.
- Season with salt and pepper. Spread the cheese on top before serving.
