Spinach Risotto

Today’s recipe is again a vegetarian one, with one of my favorite ingredients: spinaches. This recipe is great to vary a bit from plain white rice, and it looks nice too with the green color. It is a prefect side dish.

Spinach Risotto

Ingredients

  • 2 cups of white rice
  • 1 cup of white wine
  • 2 onions
  • 2 cups of boiling water
  • 200g of spinaches
  • 2 tablespoons of grounded parmigiano reggiano
  • olive oil
  • salt, pepper

Instructions

  1. Heat the oil and fry the rice in it for a few minutes, but be careful not to burn it.
  2. Add the chopped onions to the rice and stir toughly for a a few minutes.
  3. Add the cup of white wine, stir, place a lid of the pan and then let sit at low fire for about 5 minutes.
  4. Pour the 2 cups of boiling water and let sit for 15 minutes at low fire.
  5. Add the spinaches on top of the rice and mix it all together.
  6. Season with salt and pepper. Spread the cheese on top before serving.
