Endives, Roquefort and Walnuts Salad

Endives (or chicory) can be cooked or used raw in salads. I actually really rarely eat them cooked, but I LOVE them raw. They are a bit bitter, and match great with cheese, especially the blue ones. This recipes of endives is a typical french recipe, with Roquefort cheese and walnuts.

Ingredients
- 3 white endives
- 100g of Roquefort cheese
- 2 tablespoons of cream
- a handfull of walnuts
- salt
Instructions
- Remove the first leaves of each endive and cut off the stalk at the base of the leaves.
- Separate the leaves and slice them in 3. Place in a salad bowl and add a bit of salt.
- Cut the cheese in small pieces, add the cream and put it in the microwave for 3 minutes at max. power.
- Break the walnuts and spread them on the endives.
- Mix well the cheese cream and pour it on the endives.
- Serve immediately.
