Zucchini, Tomato and Gruyère Gratin

You probably noticed by now that I have been struggling with the pictures of this blog, blaming my iPhone or the light for the bad quality of the shots. Well today I’m gonna admit that I actually failed at preparing a nice looking gratin!! However I can assure you that it was really tasty! Once again this recipe is vegetarian and quite easy, although it takes some time to prepare it. Just try it, you won’t regret it…
Ingredients
- 500g of tomato sauce
- 4 leaves of basil
- 2 onions
- 1 garlic clove
- 1 teaspoon of sugar
- 1 teaspoon of chicken broth
- 2 tablespoons of olive oil
- 3 tomatoes
- 2 zucchinis
- 100g of grated Gruyère cheese
Instructions
- Cut the onions and the garlic and heat them in the olive oil in a pot.
- Add the tomato sauce, a glass of water, the sugar, the basil and the chicken broth.
- Season with salt and pepper.
- Simmer until thickened.
- Meanwhile, wash the tomatoes and the zucchinis and cut them in slices of about 1cm.
- On the bottom of an oven plate, add a layer of zucchinis, cover with a layer of tomatoes and add some tomato sauce. Cover with Gruyère cheese.
- Repeat the process by adding another layer of zucchini, tomato, sauce and cheese.
- Place in the pre-heated oven for about 40 min at 200ºC.
PS: You can easily remove the skin of the tomatoes, if you prefer, by boiling them for 5 to 10 seconds. I usually just peal them with a knife. With a peeling knife, I also peel half the skin of the zucchinis (I peel one side, leave one, peel one, etc…).
