Pasta “à la Provençale”

Today, I want to show you how to prepare a very tasty and good looking pasta. This is a French recipe, originary from the South East region, also called “Provence“. It’s vegetarian and quite easy to prepare, although you will need a few ingredients.

Ingredients
- 250g of vegetable fusilli pasta
- 1 big onion
- 1 can of sweet corn
- 2 tomatoes
- 1 big zucchini
- 1 big eggplant
- 1 clove of garlic
- 5 tablespoons of olive oil
- 1 tablespoon of rosemary
- salt and pepper
Instructions
- Wash and peel the zucchini and eggplant. Slice them and cut them in quarters. Fry them in a pan with the olive oil.
- Season with salt and pepper.
- Meanwhile, boil the pasta for about 8 minutes. Drain it and place it in a big bowl.
- Add the tomatoes and the sweet corn.
- When the zucchini and the eggplant are tenders, add the onions, the garlic and the rosemary to the pan.
- Let sit for about 5 minutes at low fire and pour everything on the pasta.
- Mix well and serve hot with a glass of light red wine and some fresh bread!
PS: If you have some of the garlic confit we prepared together, add it to this recipe, it will add a great taste to the pasta!
