Pasta “à la Provençale”

Today, I want to show you how to prepare a very tasty and good looking pasta. This is a French recipe, originary from the South East region, also called “Provence“. It’s vegetarian and quite easy to prepare, although you will need a few ingredients.

Ingredients

  • 250g of vegetable fusilli pasta
  • 1 big onion
  • 1 can of sweet corn
  • 2 tomatoes
  • 1 big zucchini
  • 1 big eggplant
  • 1 clove of garlic
  • 5 tablespoons of olive oil
  • 1 tablespoon of rosemary
  • salt and pepper

Instructions

  1. Wash and peel the zucchini and eggplant. Slice them and cut them in quarters. Fry them in a pan with the olive oil.
  2. Season with salt and pepper.
  3. Meanwhile, boil the pasta for about 8 minutes. Drain it and place it in a big bowl.
  4. Add the tomatoes and the sweet corn.
  5. When the zucchini and the eggplant are tenders, add the onions, the garlic and the rosemary to the pan.
  6. Let sit for about 5 minutes at low fire and pour everything on the pasta.
  7. Mix well and serve hot with a glass of light red wine and some fresh bread!

PS: If you have some of the garlic confit we prepared together, add it to this recipe, it will add a great taste to the pasta!
