Baby Spinach Salad with Raisin, Parmesan and Cranberry Vinaigrette

Here is another salad recipe. Salads are really awesome because they literally take a few minutes to prepare, they are really healthy and tasty. I particularly like to prepare salads based on spinach, because the green color of spinach leaves is much brighter and it looks that much better. However, spinach can be really hard sometimes so you might want to buy baby spinach that is softer instead!

Ingredients
- 300g of baby spinach
- 1 handful of raisin
- 100g of grated Parmesan cheese
- 1 teaspoon of cranberry jam
- 1 tablespoon of red wine vinegar
- 2 tablespoons of olive oil
- 1 teaspoon of whole grain Dijon mustard
- Salt and pepper
Instructions
- Wash and trim the baby spinach.
- Pour the raisin and spread the Parmesan cheese.
- Prepare the sauce by mixing the olive oil with the vinegar, the cranberry marmalade, the mustard.
- Season with salt and pepper.
You can use Parmesan chips instead of grated. I like it better with chips actually!!!
