Banana, Walnuts and Chocolate Cookies

This recipe is from a great book of pastries my sister got me for christmas. I intend on trying each one of the recipes from this book, but of course we HAD to start with a chocolate dessert. Well I really loved those cookies. I couldn’t notice the banana so much, but Bouchon could. Anyway I think it gives a great consistency to the cookies.

Banana, Nuts and Chocolate Cookies

Ingredients

  • 1 ripe banana
  • 150g of soggy butter
  • 150g of brown sugar
  • 1 teaspon of vanilla-flavored sugar
  • 1 egg
  • 200g of flour
  • 1/2 teaspoon of sodium bicarbonate
  • 1/2 teaspoon of salt
  • 200g of dark chocolate
  • 50g of chopped walnuts

Instructions

  1. In a bowl, whip the butter. Add the brown and vanilla sugars, the egg and the mashed banana. Mix well.
  2. Chop the chocolate and the nuts. Add them to the preparation together with the flour, the salt and sodium bicarbonate. Mix well.
  3. Pour on an oven grid using a tablespoon, forming balls of about 4 cm and place them about 8 cm one from another.
  4. Bake in a pre-heated oven for 15 min at 180ºC.
