Gruyère Cheese Mini Soufflés

This recipe is a classic, although I have to admit that it was the first time I tried it. I prepared individuals cheese soufflés, although you can just make one big one. I think they are great to serve with a green salad as a starter or appetizer, but you can also serve them with meat and sauce. A variant would be to use a different cheese, such as blue cheese.
Ingredients
- 50g of butter
- 50g of flour
- 6 eggs
- 50cL of milk
- 150g of gruyere cheese
- nutmeg, salt, pepper
Instructions
- Melt the butter at low-fire and add the flour. Mix well.
- Add the milk slowly and then remove from fire.
- Add the cheese and the yolks. Mix well.
- Whip the eggwhites until stiff.
- Mix very slowly and carefully the preparation with the eggwhites.
- Pour in 12 greased ramequins and bake in a pre-heated oven for 20 min at 220ºC.

That’s funny, cause this evening I just made a patisson soufflé (patisson is a type of squash, like a little pumpkin but blank and flattened)
