Green Pepper Quiche

This is a variant of the traditional “Quiche Lorraine”. It’s a great recipe because you can eat it cold or warm and you can save it in the fridge until the next day. I also like to prepare appetizers from this quiche, but just cutting the pie in small squares and pinching a toothpick in each square.
Ingredients
- 1 puff pastry
- 200g of bacon
- 3 eggs
- 1dL of cream
- 3 green peppers
- 2 onions
- 50g of grounded gruyere
- olive oil
- salt, pepper
Instructions
- Wash and slice the onions and the green peppers.
- Cook them in 2 tablespoons of olive oil for about 10 minutes in a pan.
- Meanwhile, wix the eggs, the cream and the gruyere in a bowl. Season with salt and pepper.
- Spread the bacon on the pastry, as well as the peppers and onions. Pour on top the mixture of eggs and cheese.
- Place in the pre-heated oven for about 30 min at 200ºC.
If you prefer, you can cook the bacon with the peppers and the onions.
