Green Pepper Quiche

This is a variant of the traditional “Quiche Lorraine”. It’s a great recipe because you can eat it cold or warm and you can save it in the fridge until the next day. I also like to prepare appetizers from this quiche, but just cutting the pie in small squares and pinching a toothpick in each square.

Green Pepper Quiche

Ingredients

  • 1 puff pastry
  • 200g of bacon
  • 3 eggs
  • 1dL of cream
  • 3 green peppers
  • 2 onions
  • 50g of grounded gruyere
  • olive oil
  • salt, pepper

Instructions

  1. Wash and slice the onions and the green peppers.
  2. Cook them in 2 tablespoons of olive oil for about 10 minutes in a pan.
  3. Meanwhile, wix the eggs, the cream and the gruyere in a bowl. Season with salt and pepper.
  4. Spread the bacon on the pastry, as well as the peppers and onions. Pour on top the mixture of eggs and cheese.
  5. Place in the pre-heated oven for about 30 min at 200ºC.

If you prefer, you can cook the bacon with the peppers and the onions.
