Chocolate Meringues with Chocolate Mousse Topping

This meringue recipe is easy to prepare although it takes a few hours. Since the topping is made of cream, you won’t be able to keep them too long and it’s better to save them in the fridge, or just eat them all very quick!!!
Ingredients
- 4 eggwhites
- 200g of sugar
- 10g of cocoa
- 60g of dark chocolate
- 30g of cream
- salt
Instructions
- Mix the cocoa and the sugar.
- Whip the eggwhites until stiff with a hint of salt, while pouring slowly the sugar mixture.
- Cover a baking tray with baking paper and with a tablespoon, pour the eggwhites into little balls.
- Place on the lowest tray of a pre-heated oven for 1h30 at 110ºC.
- Meanwhile, heat the cream in a bowl int he microwave at maximum power for about 2 minutes.
- Break the chocolate in pieces and add it to the cream. Mix well and place in the fridge for 1h.
- Whip the chocolate and cream in a mousse and assemble the meringues 2 by 2 with the chocolate topping.
- Leave in the fridge for 1h before eating.
