French Onion Quiche

The idea for this onion quiche recipe comes from my friend Saskia, you made one for us the other day. I can’t remember exactly the ingredients she used to prepare her pie, but they have to be similar to the ones I describe here. At least, and for once, I managed to take a picture that isn’t that bad. I find it really hard to take pictures of quiches and pizzas!!

Ingredients
- 1 puff pastry
- 6 big onions
- 6 eggs
- 150mL of cream
- 1 teaspoon of nutmeg
- 150g of grounded gruyere
- olive oil
- salt, pepper
Instructions
- Slice the onions and let them melt in olive oil in a pan for 5 minutes.
- In a bowl, mix the eggs, the cream and the cheese. Add the nutmeg. Season with salt and pepper.
- Spread the onions on the pastry and pour the mixture of eggs and cheese.
- Place in the pre-heated oven for 30 min at 200ºC.
