Crunchy Chocolate Truffles with Rum and Orange

I like truffles a lot but I can only eat 2 or 3 max every 6 months… I mean it’s too much chocolate at once isn’t it?! I checked on Wikipedia and it says they were invented both by John Labarge in 1625, and Antoine Dufour in 1895. I don’t know which is true, so well congrats to you both I guess!!

Crunchy Chocolate Truffles with Rum and Orange

Ingredients

  • 350g of dark chocolate
  • 50g of cream
  • 50g of rum
  • 1 orange zest
  • 7g of honey
  • cocoa

Instructions

  1. Heat the cream with the honey and the zest of the orange.
  2. Break 200g of the chocolate and let it melt in the cream. Add the rum.
  3. Let the chocolate sit in the fridge for 1h, until stiff.
  4. With a teaspoon, make balls the size of marbles.
  5. Melt the rest of the chocolate in the microwave with a bit of water and use it to cover the truffles.
  6. Finally, cover them with cocoa.

PS: I didn’t have cocoa powder so I covered them with chocolate powder instead!
