Beetroot Cream

This recipe is adapted from a book of verrine recipes. A “verrine” is a typically French confection that consists in layering different ingredients in a small glass (such as a shot glass) and that is usually consumed as a snack or appetizer. Verrines usually look great because you tend to create layers very different colors and textures. It has volume and it’s tasty if you know which ingredients work well with each others. I think that it’s an art that is difficult to master because you need to think about too many details and you have to be extra careful when pouring everything in the glass. But the result is usually worth it. Anyway, this beetroot cream was probably one of the easiest recipe of verrine and it was quite good too!

French Onion Quiche

The idea for this onion quiche recipe comes from my friend Saskia, you made one for us the other day. I can’t remember exactly the ingredients she used to prepare her pie, but they have to be similar to the ones I describe here. At least, and for once, I managed to take a picture that isn’t that bad. I find it really hard to take pictures of quiches and pizzas!!

French Goat Cheese and Walnuts Green Salad

This is one of my favorite salads recipes, because I love the combination of dry fruits with cheese and I love the colors. I like to change the ingredients too, by adding slices of apples or honey on the goat cheese. The possibilities are endless… Try to use romaine lettuces for a better resistance to heat if you plan on eating the cheese before pouring it on the salad.

Chocolate Mousse

This chocolate mousse recipe is really fast and easy and you can use as a base to create many other desserts, for example combining it with orange custard, pear gelatin, etc. I think it should be enough for 6 people!

Chocolate Meringues with Chocolate Mousse Topping

This meringue recipe is easy to prepare although it takes a few hours. Since the topping is made of cream, you won’t be able to keep them too long and it’s better to save them in the fridge, or just eat them all very quick!!!

Spring Pizza with Artichokes, Ham, Corn and Blue Cheese

This pizza I invented is my favorite of all. I know some people think it’s weird to add sweet corn on a pizza, but I really love it! I called it “Spring Pizza” and I hope the name was not already taken. Anyway it’s quite easy to prepare and you should try it!

This potatoes and garlic recipe is tasty but I’m guessing it’s not ideal for diets! You can serve it with some chicken or just enjoy it with a green salad like we usually do. It’s actually pretty easy to prepare because you don’t need to peel the potatoes or to chop up the onions and garlic. You just put it all there in the butter and wait. If you can use a small type of potatoes, it will taste even better!

Mini Orange and Chocolate Triangles with Hazelnuts

Preparation time: clock 3h.

This recipe is based on the typical dough used for many kinds of cakes and cookies: 1 measure of icing sugar, 2 measures of butter and 3 measure of flour. The icing sugar makes it easier to knead the dough. The result was pretty good. The triangles tasted good and were very beautiful. Next time, I want to try with pistachios instead of hazelnuts, I think it will give it even more color and originality!

Small French Chocolate and Coffee Cakes

I made the little cakes the other day to bring to Bouchon’s dad place. They actually seemed like a typical chocolate cake, but I really love the touch of expresso in them! I think it would taste even better served with an English cream.

Banana, Walnuts and Chocolate Cookies

This recipe is from a great book of pastries my sister got me for christmas. I intend on trying each one of the recipes from this book, but of course we HAD to start with a chocolate dessert. Well I really loved those cookies. I couldn’t notice the banana so much, but Bouchon could. Anyway I think it gives a great consistency to the cookies.
