Zucchini Gratin

This zucchini gratin recipe contains bacon, but you can easily remove it if you prefer the vegetarian variant. It is pretty tasty - of course like everything with cheese - and quite easy. The only trick is to wrinkle the zucchinis, because after boiling them, they are full of water and will release it all while baking. So if you don’t want a zucchini soup for dinner, be careful with that and you should do great!
Ingredients
- 4 zucchinis
- 2 onions
- 3 eggs
- 3 garlic cloves
- 150mL of cream
- 150g of bacon
- 150g of grounded Gruyere
- 2 tablespoons of olive oil
- salt and pepper
Instructions
- Peel and cut the zucchinis in 1cm slices. Boil them in water for 10min.
- Wring them thoroughly and cook them for 10min with the onions and bacon in a frying pan.
- Transfer the zucchinis, onions and bacon to a large gratin dish covered with olive oil.
- In a bowl, mix the eggs, the cream and the cheese. Spread the mixture over the zucchinis.
- Sprinkle with salt, pepper and garlic.
- Spread the Gruyère cheese on top.
- Bake in the pre-heated oven for 40min at 200ºC.
