Baby Spinach Salad with Raisin, Parmesan and Cranberry Vinaigrette

Difficulty: difficulty leveldifficulty leveldifficulty level

Preparation time: clock 5min.

Here is another salad recipe. Salads are really awesome because they literally take a few minutes to prepare, they are really healthy and tasty. I particularly like to prepare salads based on spinach, because the green color of spinach leaves is much brighter and it looks that much better. However, spinach can be really hard sometimes so you might want to buy baby spinach that is softer instead!

Chicken and Beef Couscous with Vegetables

Difficulty: difficulty leveldifficulty leveldifficulty level

Preparation time: clock 2h30min.

The other day, I invited our friend Etienne to have some homemade Couscous. It’s not particularly fancy or anything but I like to prepare couscous when I invite people because everybody usually likes it, and since it’s so long to prepare, it is pretty much the same to prepare for 2 persons than for 5 (and you can keep the leftovers for the next day). Moreover, dishes like couscous that are long to prepare are unusual because nobody wants to spend 3 hours cooking nowadays. The secret is that it takes actually only about 30 minutes to cut the vegetables. The rest is basically waiting for the meal to cook itself. So well, what I am trying to say, is that we don’t eat couscous everyday so better enjoy it! Now let’s see if the lucky guests liked it?!

Spinach & Goat Cheese Pastries

Difficulty: difficulty leveldifficulty leveldifficulty level

Preparation time: clock 40min.

Bouchon really loves “empanadas”, which are some kind of stuff bread or pastries. Empanadas are really typical in Hispanic countries, but I never saw any in France as much as I can remember. I never really liked them before because the only times I tried them was after going out late at night in Barcelona and buying them in the street from the beer dealers and as you can imagine, those ones are not really tasty…

But well I decided today to try to make some for the 1st time and see how that would go. It was much faster and easier than expected and the great thing is that you can fill them with basically anything you’d like! Here is the recipe of the ones I made today: Spinach Pastries.
